Breakfast Done Easy: Strawberry Pineapple Overnight Oats
I'm beyond excited... I am heading on my first trip as a mama without Cruz. And by excited I mean, I'm eager to be free and wild in the mountains and hike, but I'm also anxious as fug to leave him, already smothering him with love cause I'm going to miss him like crazy and giving his dad all the talks haha.
But let's talk breakfast, the real reason I'm here...to dose you with a recipe that came with high reviews and created by the Progress Project's Registered Dietitian Mrs Jessica Roocroft!
It's the perfect recipe for when you need a grab and go, protein-rich breakfast these for hot summer days. Take 5 minutes the night before and whip a batch of these tropical beauties up!
Makes about 2-3 portions, depending on portion size per serving you prefer, and if you add additional seeds, peanut/nut butter, fruit, etc. the next day!
- 1/2 cup each Frozen or fresh Pineapple Chunks and Sliced Strawberries
- 1 cup Old Fashioned Rolled Oats
- 1/2 cup Greek or Skyr Yogurt (lactose-free if needed)
- 1 cup Milk of Choice
- 2 Tbsp Chia Seeds
- 2 Tbsp Maple Syrup
- 1 tsp Vanilla Extract
Optional and recommended: Next day garnishes, see below!
1- Add all ingredients to a bowl & mix well.
2- Divide into jars or containers with airtight lidsand refrigerate overnight.
3- Garnish with some of these goodies in the morning for additional texture (which I'm a BIG fan of): Shredded Coconut, Dollop of Crunchy Peanut Butter, Sprinkle of Hemp or Pumpkin Seeds, or Extra fruit!
I hope you all enjoy... also if you have strawberry protein powder on hand she suggested trying to add in a scoop to thicken it up and add an extra dose of protein into your breakfast.
