So it seems totally ironic that I am whippin' up healthy coffee creamers when I still have some serious food aversions happening, the main one still being coffee!
You know what's pretty crazy is that for this last section of Diggin' In that releases next week I was creating all these recipes (this is one of them) and decided to add up the amount of caffeine I was consuming prior to the baby...you ready for this? It was literally just below 900mg per day! How I didn't roll over of a heart attack or panic attack is beyond me.
Since the aversions and swapping out all those coffees with extra espresso shots, I've only been consuming one fizz (sometimes two) on a daily basis, which means I am now only consuming 55mg. I decreased it by over 800mg and yet I'm pregnant and have the cleanest energy I've had in years.
I used to get all these health nut junkies telling my my adrenals were shot, and I'd be in full blown denial, "no, no, I feel great". And to be honest, I felt pretty good but there's no way that I could've been.
Speaking of pregnancy, I'm heading up to my 36th week on Friday - holy, hot dang - that time flew by! But also at the same time every night when I try to roll over to pee for the 500th time I feel like I've been preggo my whole life. Ya feel me?
I'm feeling more at ease these days, a new sense of calm has washed over me and I am starting to really get EXCITED and not just anxious. But don't get me wrong, there's still no crib sheet on... I swear I'll get my ass in gear soon. You know it's crunch time when your nail tech asks you if you are all ready, and you say, "not yet" and they just look down and go back to filing with a scared look on their face lol.
This weekend is my baby shower... something I was really hesitant to do at first. My friends said I'd regret it if I didn't, and they are probably right. Despite being on social media, I don't like celebrating "me" - birthdays, showers, etc are just not my jam. But let's turn over another leaf and celebrate the little guy who's about to become the best side kick I could ask for.

After I prepared this I allowed it to fully chill in the fridge for a few hours before consuming. I poured a few tablespoons into the frother and it made it into a thick frothy whip that was to die for. If you don't have a coffee frother machine, grab a cheapie from amazon like this one.
I also got the nut milk bags from amazon for a few dollars too - it was a steal of a deal!
