Thai Peanut Salad

 

Hi beauties!!

Happy Monday...I think I'm calling it a happy Monday cause I'm sitting here in silence at 9pm in silence as Cruzer sleeps. Today was one of those hard mama days. I know we all have them, but gah, today was one that was very hard to remain calm through.

Then, my girlfriend sends me a picture of when he was a newborn and I crumble. I want the time back. Feel the mom guilt. All the feels tonight.

Moving along to my Friday night where I had a mom free night to hang with two of my best friends. We stayed in, got cozy and I brought this big ol' salad for our dinner.

Directions:

Chop red cabbage, I used about 1/3 of head (about 2 cups chopped).

Chop 4 peppers, I used a variety of red and orange peppers

Spiral or peel 2 carrots, I used an old school peeler like this to get thin strips.

Boil 1 cup of frozen edamame, allow to cool then add to salad.

Mix vegetables then add toppings.

Sprinkle of peanuts and cilantro.

Dressing Details:

1 cup oat milk

1 cup 0% greek yoghurt (lactose free)

1/2 cup natural peanut butter

3 tbsp sriracha

1 tsp ground ginger

Protein:

I added chicken breasts to the salads and if you haven't tried steaming your chicken yet try this: place chicken breasts in an inch of water, drizzle with olive oil and seasoning of your choice. Place lid on and simmer chicken breasts until done. The water keeps them super juicy!

Drizzle on dressing and enjoy! If making a large portion keep dressing separate for leftovers.
