Protein Cookie Dough Balls

Hey beauties!

 I whipped up these balls right before I left to mexico when the cravings hit...and I bought half a dozen with me to snack on during my flight (I shared with others).

Side note, I always get asked how many to eat when I make these. I personally have 1 if it's just a sweet tooth craving but if using as a mid day snack to tie me over I have two.

If you are someone who works an out of home job, I used to always pack two per day with my lunch with was my fav little snack with my coffee on my first break (back when I used to drink coffee ;)).

I seriously can't believe it's been over two years since I had coffee - I went from basically drinking two pots a day to nothing and have never felt better. Shout out to fizz.

Here's all the details to making this recipe today!

Ingredients:

4 scoops simply one vanilla protein powder

1 cup oat flour

7 dates (pre soaked)

1/4 cup peanut butter

1/3 cup oat or nut milk

1 tsp vanilla extract

1/4 cup vegan or dark chocolate chips

Directions:

Place dates into boiling water and allow to sit while you get the rest of your ingredients ready. Then strain water, mask with a fork, and throw into food processor once your oats are blended if that step is required.

If you don't have oat flour on hand (I didn't either) simply place oats into a food processor or blender and blend on low and wah-la. 

Add in remaining ingredients into food processor minus the chocolate chips.

After the ingredients are blended, add in chocolate chips and stir or fold in with hands. If your consistency feels too dry, add in a bit more milk and re blend. If too moist, then add in a scoop of protein powder and re blend.

I use a little meatball scooper to form my balls (this helps me not make them the size of my head lol).

Place in fridge for 20ish to set and chill before consuming. They will stay good in your fridge for about a week.

Even Cruzer loved them ;)

ps the Simply One protein powder is the low carb / low sugar vegan powder Arbonne came out with late last year that I love for baking as it keeps the sugars down when I add in my natural sweet stuff like dates!
