Healthy Gal Greek Pasta Salad

Hey there hotstuff!

Okay so I've made this Greek Style Chickpea Pasta Salad the other night and it's definitely going to be a staple in my summer recipe rolodex! It was super refreshing, light and makes for great leftovers...oh and it took 10 minutes.

A few years ago I swapped over to the chickpea side for pasta because it tastes great and it's literally packed with protein and fibre! I love that you don't need to add meat to your meals and still get in your protein source. Oh and mamas, Cruz loves it too (doesn't really know any different) but great for getting protein into your little ones too. I often make leftover noodles, set them aside and add tomato marinara of some sort for easy lunches for him.

Directions:

  1. Boil water & cook chickpea pasta as stated on box (drain and rinse).
  2. While pasta is cooking chop up four bell peppers, one cucumber and any other veg if desired (I kept this simple with just these two ingredients but could add in tomatoes, red onions, olives etc).
  3. Add in pasta
  4. Top with Greek dressing of choice (mine is pictured)
  5. Top with crumbled goat cheese
