Frozen Peanut Butter Cups

 

Hey beauties!

Happy Freakin' Friday! This week felt like it went by in 3 seconds and my to-do lists got longer, not shorter...can you relate?

We finally got a full time day care spot starting on May 1st and this mama could not be happier. I feel like the the waiting game was beyond stressful... "Did they forget about us?" "Maybe I'll call again for the 14th time" "Maybe I'll bribe them!" - all my thoughts to all 8 places we were waiting on.

One place got us in for drop in days a few months ago, so at random they would call and I'd pack him up and we'd both be the happiest campers. My goal is 3 days per week, but pay for the full time so it's there if and as needed. Ya'll working from home with a WILD toddler is no joke. Last night's business meeting was proof of that in a nutshell while he drew on me, head butted me, and yelled at all my zoom guests.

Let's get to it though, the frozen peanut butter cups

Directions:

Mix the following ingredients together, then form into the bottom of a muffin liner and freeze for 15ish minutes

Then remove from the freezer and top with melted chocolate. The easiest version of this is to melt 1/3 cup dark chocolate with 1 teaspoon coconut oil in the microwave for 40 seconds and stir well or until melted completely. Then top the bases off with chocolate.

I added a sprinkle of pink salt to the top of each one.

This recipe made 9 delicious frozen snacks, one of which I devoured immediately before it was even frozen yet haha.
